How do I serve my reception meal when the caterer drops the food and leaves?

Whether you are planning to serve your guests lobster tail on the finest china, a hometown BBQ buffet on disposables or tacos out of a food truck, there must be structure when communicating with a caterer.

While some caterers prefer to stay on-site during events, a fair share do what is called a drop & go.

Well, what’s a drop & go?

Drop & go implies that the caterer will simply deliver the food and leave the premises. 

Now what?! Am I responsible for all this food?!  It’s my special day, I don’t want to be tied down to food execution!
